Bees can fly up to 5 miles from their hives to get the nectar they use to make their honey.

Well, my honey hails from a quaint and mainly unpopulated (except for cows and horses) town of Gilboa, located in the beautiful county of Schoharie, New York. It is the closest to organic a honey can come since the area surrounding my apiary is mainly surrounded by animal farmers. This means the bees use the wildflowers growing in the farmers' grazing land for nectar.

I do not pasteurize/hot filter the honey. I do what is called "coarse filtering". Coarse filtering leaves the pollen but takes out any foreign particulates. You know you have real honey if, you still have some left, and after a fair amount of time it crystalizes. Then you absolutely have real unfiltered honey!
